When purifying our oysters, we are nothing short of obsessive in our pursuit of the best process possible. The innovative set-up at our depuration facility is industry-leading.

We have a large, CEFAS-approved, state-of-the-art depuration facility in Cock Clarks in Essex. It uses the latest technology to provide the best depuration available.
The oysters are placed in large tanks for a minimum of 42 hours. Saltwater is circulated at a set flow rate through UV lights, and ozone, a naturally occurring oxidiser, is added to complement this.
The temperature and salinity are regulated and the water passes through protein skimmers to remove suspended matter and improve water turbidity/water clarity. This maintains the optimum metabolic health of the shellfish.
We work closely with the local authority in this highly regulated industry. Our system is regularly monitored and challenge-tested to meet our stringent quality standards. This ensures that fresh, high-quality oysters are delivered to our customers daily.
