When purifying our oysters, we are nothing short of obsessive in our pursuit of the best process possible. The innovative set-up at our depuration facility is industry-leading.

What is oyster depuration?

Depuration is the process of purifying oysters. Oysters are filter feeders, filtering up to five litres of water an hour. Depuration is the process of placing oysters in a controlled environment where they can filter the purest water possible.

Why is our depuration process different?

We have a large, CEFAS-approved, state-of-the-art depuration facility in Cock Clarks in Essex. It uses the latest technology to provide the best depuration available.

The oysters are placed in large tanks for a minimum of 42 hours. Saltwater is circulated at a set flow rate through UV lights, and ozone, a naturally occurring oxidiser, is added to complement this.

The temperature and salinity are regulated and the water passes through protein skimmers to remove suspended matter and improve water turbidity/water clarity. This maintains the optimum metabolic health of the shellfish.

Our depuration plant is industry leading, and we’re certainly proud of it, but we’re always looking into new research and technology to keep ahead of the competition.
